Made from fresh organic cooked grape must that is slow fermented and naturally acetified in barrels, then refined for 6 to 7 years. This is Acetaia San Giacomo’s richest and most structured balsamic, sweeter than sour and assembled from multiple vintages, some over seven years old. It contains only one ingredient: 100% organic cooked must, with no added wine vinegar.
The name Essenza means “essence”, reflecting the years of care and refinement behind this rare condiment. Its flavour is deep and layered, with notes of dried plum, liquorice, black cherry and kola nut, alongside subtle vinous hints from natural fermentation.
Essenza represents the pinnacle of Acetaia San Giacomo’s craft, created without thickeners or shortcuts, for those who value purity and complexity.
