This original recipe draws inspiration from the traditional apple balsamic vinegars of Modena and Reggio Emilia, where apples were used when grapes were scarce.

Refined with care, BalsaMela offers a gentle, sweet‑sour balance and a soft acidity that is less assertive than grape‑based balsamic. Its flavour is bright and fruity, with a subtle warmth reminiscent of home‑baked apples.
