Also known as the oyster plant or oyster vegetable salsify has a slightly sweet flavour and a mild taste similar to oyster.
Delicious on it's own as an alternative to sprouts & parsnips or matched beautifully with mushrooms or celeraic. The fatty salty taste of bacon also pairs well with salsify.
Fun facts: Salsify was popular with the Victorians and is a member of the dandelion family
Directions For Use
Wash before use. Salsify is best suited for cooked applications such as boiling, roasting, sautéing, steaming, frying, and baking. Before cooking, the skin should be peeled and to preserve the colour of the white flesh, the root can be submerged in water with lemon juicer vinegar. Salsify is most often steamed, pureed, and added to soups or stews as a thickener or served as a puree with chicken or other meat dishes. They are also commonly sautéed with butter to create a rich and creamy side dish.
