Grape must from the Emilian countryside produced from organic farming (grape varieties include lambrusco, ancellotta, malbo gentile, salamino, marani) and cooked over direct heat to be reduced by evaporation up to 25-30% of the initial volume.

Sweet syrup ideal for ice cream, panna cotta, yogurt, pork and, as in the past, with polenta, on the snow or diluted in fresh water as a thirst-quenching tonic.
