Yurrita sources anchovies directly from fishing boats in the Cantabrian Sea, selecting only the freshest, perfectly sized fish. Each anchovy is salted and packed in traditional tins, then cured for a minimum of 20 months to develop its rich, distinctive flavour.
Every fillet is prepared by hand, following time-honoured methods. Creating an exceptional anchovy relies on three essential steps:
- A long maturation period under controlled temperature
- Thorough washing of the salted fish to achieve the ideal balance of saltiness
- Careful trimming to remove all bones, ensuring a smooth, delicate texture
