Lion's Mane (AKA Pom Pom Blanc) is a beautiful mushroom with many benefits for chefs. Practical,  affordable, no cleaning required. In addition to its distinctive and decorative appearance, the wig mushroom has firm flesh and a mild sweet taste.

Some compare the taste to that of lobster or crab, others recognize a hazelnut in the slightly sweet note.
