This hard pressed cheese is mainly made in cooperative cheese dairies in the Jura using raw milk produced by Montbéliarde and Simmental dairy cows. Using a traditional maturing process, involving heating the whey, the ancestral cheese making expertise give this Comté an unparalleled intense flavour.
